    VIBE

Being in the business of sushi runs in head chef Sotohiro Kosugi’s family, and with such fish-connoisseur pedigree, it makes sense that this is a guy who really understands how to achieve pitch-perfect purity of flavor and presentation. It comes at no surprise, then, that he flies in the finest raw fish from around the world five times a week. It’s also no surprise to find him pacing behind this Zen-like venue’s long blond-wood sushi bar, correcting and perfecting every dish. Design-wise, the stark white surrounds offer little distraction from the inventive sushi.

    CROWD

    Sushi connoisseurs and devoted locals.

    WHAT WE WOULD WEAR

Stylishly casual; run with the chic Greenwich Village crowd and wear a classy top, dark pants, and fancy flats.

    WHY WE LIKE IT

    The uni! It’s Soto’s raison d'être.

    WHAT WE WOULD CHANGE

Omakase falls short of some of the better individual options, which is surprising for such a popular sushi spot.

    GOOD TO KNOW

The understated and sign-less exterior is tricky to spot. The seats at the sushi counter, where you can watch the masters at work, are the best in the house.

    CLOSEST COMPS

Kurumazushi (New York); Ushiwakamaru (New York)
